Coddle

• smoked bacon lardons
• 6 chunky sausages
• 2 onions
• 2 tablespoons minced parsley
• 1.5kg russet potatoes
• 500ml chicken stock

1. Preheat the oven to 150°C.
2. Brown the bacon.
3. Brown the sausages. Chop into thirds.
4. Cut the potatoes into thick slices.
5. Layer in a casserole dish, add the stock.
6. Bring to the boil on the hob, then bake for 90 minutes.
