Mulled Wine

  1. Peel the clementines, lemon, and lime.
  2. Add the peel, sugar, and juice to a saucepan.
  3. Add the cloves, cinnamon, bay leaves, and 10 gratings of nutmeg. (If using ground nutmeg, use half a teaspoon.)
  4. Halve the vanilla pod lengthways and add.
  5. Add just enough wine to cover the sugar.
  6. Simmer until the sugar has completely dissolved, then bring to the boil.
  7. Boil for 5 minutes.
  8. Turn down the heat and add the remaining wine and star anise. Heat gently.
